星期六晚,弄了一個很美味的牛排,這次煎牛排是有生之來最美味的,是次終於研究到怎様才令牛排充滿肉汁,很多人說牛排質素好,自然好吃,但我很怕買一片貴牛排卻給我弄誇,是次買的是吉之島的貨品,四十九元三片西冷,很化算,最重要是烹調恰當,把牛排加分加分再加分.
 

如何令牛排肉汁豐富?火一定要猛,不要把牛排煎得太熟,差不多半熟時作一個"Resting"的動作,"Resting"就是先把牛排上碟,再用鋁泊紙包著,待十數分鐘才上枱.做法是否正宗就不得而知,但這四十九元的牛排經過Resting後,真的美味十倍.Resting後,碟上充滿肉汁,剛好七成熟,perfect!如果牛排厚一點,一定更可口,大家不妨一試.
