4 Apr 2015 – 失敗的臘腸卷

今早試做了中式饅頭及臘腸卷,材料簡單卻做法不易,臘腸改用急凍台灣腸,比廣東臘腸方便及少點油膩,總算味道還可,外表卻欠奉,麵包一貫易學難精,幸好有敏言訥言捧場,看來還是要買個中式蒸籠。

材料:
中筋麵粉 200g
糖 10g
酵母 3g
水+奶 120ml

做法:
1. 搓粉後第一次發酵一小時
2. 排氣及造型
3. 第二次發酵大約20分鐘
4. 隔水蒸大約15分鐘
